Đậu Hũ Sốt Mỡ Hành:  Vegan Braised Tofu in Scallion Sauce

Ingredients (all are approximate): 


1 block firm tofu, cubed, pat dry

1 bunch of fresh scallions, chopped. Separate the white and green parts.

4 cloves garlic, minced

3 Thai chili peppers, minced

2 stalks lemongrass, remove tough outer leaves, minced


For the sauce:

½ tablespoon cornstarch

1 cup cold water

2 tablespoons soy sauce or to taste

1 tablespoon tamari sauce or to taste

½ tablespoon chili oil or to taste

1 tablespoon rice vinegar or to taste

1.5 tablespoon syrup or sugar or to taste

Whisk the cornstarch with the cold water until dissolved. Add all other ingredients and mix well.


Instructions


1. Fry tofu until golden brown. Set aside.


2. Heat 3 tablespoons of oil on medium high heat. Add Thai chili, garlic, scallion whites, and lemongrass. Cook for 2 minutes.


3. Add tofu and sauce. Simmer until sauce thickens to desired consistency.


4. Turn off heat and add the scallion greens. Mix.


5. Garnish with fresh scallions. Serve with rice.
