Bầu Xào Nấm: Squash, Mushroom and “Egg” Scramble
Ingredients:
1 Opo squash or Tromboncino squash or 4 zucchini - cut into even sizes
Sliced mushrooms
Just Eggs or real eggs
Onions and garlic, minced
Mushroom seasoning granules
Optional: scallions and mung bean sprouts
Instructions:
1. Scramble Just Eggs or real eggs. Set aside.
2. Heat oil on medium heat. Add onions and garlic. Cook for 2 minutes.
3. Add mushrooms. Cook for 3 minutes.
4. Add squash and mushroom seasoning granules. Cook for 3 minutes or until squash is soft.
5. Add scrambled eggs, scallions, and bean sprouts.
6. Serve with rice.
