Đậu Bắp ớt Cà Chua : Okra in Tomato Chili Sauce
Ingredients:
1 pound okras, sliced
1 point cherry tomatoes, seeded
3-4 Thai chili peppers, chopped
1 bulb shallot, minced
1/2 bulb garlic, minced
4 - 5 tablespoons soy sauce or to taste
1 tablespoon vegetarian hoisin sauce or to taste
Water to deglaze
Scallions to garnish
Instructions:
1. In a hot wok, heat oil on high heat until smokey. Add okra and cook for 2 minutes or until the edges are charred. Remove from the pan and set aside.
2. Add some more oil back to the pan and heat on medium heat. Add shallots, garlic, Thai chili and cook for 3 minutes.
3. Add soy sauce, tomatoes, and hoisin sauce.
4. Add water to deglaze. Cook and reduce sauce down to desired consistency.
5. Add okras back to sauce. Turn off heat.
6. Garnish with scallions. Serve with rice.
