Đậu Đũa Xào Đậu Hũ: String Beans and Tofu Stir Fry
Ingredients:
Approximately 1 pound of strings beans or regular green beans. Cut into 3-inch pieces.
3-4 cloves of garlic or to taste. Sliced thin.
1 shallot. Sliced thin.
1/ pint mushrooms. Sliced.
1 block extra firm tofu. Cut into cubes. Pat dry.
1 teaspoon mushroom seasoning granules or to taste
1 tablespoon (or to taste) vegetarian stir fry sauce or oyster sauce
1 tablespoon soy sauce or to taste
Black pepper to taste
Instructions:
1. Pan fry the tofu until crispy.
2. Bring a pot of water to a rolling boil. Add string beans and cook for 2 minutes.
3. Remove string beans and immediately submerge beans in ice water to stop the cooking process. Drain and pat dry.
4. Heat 2-3 tablespoons of cooking oil on high heat.
5. Add the shallots and cook until slightly brown.
6. Add mushrooms and cook until slightly brown.
7. Add the strings beans and cook until for 2 minutes.
8. Add the tofu, garlic, mushroom seasoning granules, soy sauce, and stir fry or oyster sauce.
9. Add 1/2 cup of water and mix well. Let cook until beans are tender to taste.
10. Serve with rice.
