Su Su Xào: Sautéed Chayote Squash with “Eggs”
Ingredients:
2-3 Chayote squashes, sliced into even pieces
1 bulb shallot, minced
3-4 cloves garlic, minced
1 bottle Just Egg or 3 eggs
Black pepper
Mushroom seasoning granules
Soy sauce
Green onions for garnish
Instructions:
1. In a non-stick pan, heat oil to medium heat and scramble Just Egg or eggs until done. Remove and set aside.
2. Add a little more oil to the pan and heat to medium heat. Add shallots and garlic and sauté 3 minutes.
3. Add squash, mushroom seasoning granules to taste, and soy sauce to taste. Cook until squash is soft.
4. Add eggs back into the pan and mix well. Garnish with green onions.
5. Serve with white rice.
