Vegan Vietnamese Recipes Shared by Nguyễn Thiên Ân
Hành Phi: Fried Shallots
Ingredients:
Shallots (as many as you like)
Flour or corn starch (enough to lightly coat the shallots)
1 teaspoon salt
1/2 lemon, juiced
Frying oil (I use peanut oil)
Instructions:
1. Peel and wash the shallots. Pat dry with paper towels. Slice thinly.
2. Thinly coat the shallots with the flour or cornstarch.
3. Start heating oil to 325F-350F. While oil is still cool, add the salt and lemon juice. This will help prevent oil splatter while frying.
4. Fry shallots in batches until they JUST turn golden brown. Remove from hot oil and let drain on drying rack. or colander. Spread out on a baking sheet lined with paper towels and let cool.
5. Store in freezer or fridge for long-term use. Sprinkle on top of rice, noodles, soup, congee, green beans, and more to add a vibrant contrast of flavors!
